It's actually FAR better than it sounds. We just boil cauliflower, mash them, add salt, pepper, and butter. It actually tastes like mashed potatoes with gravy. I never would've believed it...but, it does.

Ok your recipe sounds much faster than Eli's. Wonder if you add garlic do they taste like garlic mashed potatoes?

Oh, you reminded me. I forgot two ingredients.

Also add garlic - at least some...and obviously more if you want the flavor a little heavier. Also...add about 1 spoonful of plain yogurt to it.

I have always been a lover of mashed potatoes and gravy. But to be totally honest, I actually prefer these cauliflower "potatoes" more. Like I said...I never would've believed it. And if you ever saw me, you'd know I'm one the guys that it's ok to take food advice from.

Ok, sorry again...the last thing I left out. IF you have beef stock to boil the cauliflower in, it is significantly better. But either way...completely drain the cauliflower before mashing them...or it will be super runny.
