If you cook 10 cups of dry rice in your cooker, you need to add 8oz of sweetened rice wine vinegar. Some vinegars have more sugar than others. I like to use Marukan.
So, dump your cooked rice into a wooden or plastic bowl, let cool so it's still very warm but, not hot. Pour in vinegar and mix in. Don't mix too much or you will turn the rice into what's called moshi or, gooey rice.
