Baked and mashed cauliflower...in an oven safe dish add 3 tablespoons half and half or milk, cut cauliflower into 1 inch pieces, salt and pepper. Cover with foil and bake for 45 min...remove from oven add butter or season as you would your potatoes...I leave out the butter...mash. Place back in the oven covered for 15 minutes and serve. It's the same consistency and flavor as potatoes. But, super healthy and very few calories. I trick most people because it tastes too good to be healthy ;)

Oh, you reminded me. I forgot two ingredients.

Also add garlic - at least some...and obviously more if you want the flavor a little heavier. Also...add about 1 spoonful of plain yogurt to it.

Also add garlic - at least some...and obviously more if you want the flavor a little heavier. Also...add about 1 heaping spoonful of plain yogurt to it.

Ok, sorry again...the last thing I left out. IF you have beef stock to boil the cauliflower in, it is significantly better. But either way...completely drain the cauliflower before mashing them...or it will be super runny.

Break-in was done on the dyno... we had a temp wire harness on her today to see if that was the problem so we haven't finished the tune yet. She is extremely fat in the mid-range... She ran 90+ today at half throttle... 3800 rpms was 70mph at 21% throttle. I know I will need a bigger prop. Right now running a 30p labbed.
