Angel makes his own Italian sausage type of sausage right there while he is working... Carves up pork butts, grinds it, spices it, lets it age in the refrigerator a few days before browning it and using it... He makes his own buttermilk dressing, hot sauce, pesto, wing sauce...
This guy knows his stuff...
